Winter, Redefined: Behind Our Latest Seasonal Menu

When conceptualising our new Autumn/Winter collection, the ambition was simple: push past the expected. 


Winter menus naturally lean into rich warmth, heavy sweetness and dark spice, but this season we explore the beauty of contrast. Deep, comforting flavours meet bright citrus, savoury tea infusions and crystal-clear, clarified pours. 


Ten cocktails, built from the ground up, where every ingredient earns its place. A study of balance, texture and contrast, designed to capture the depth of winter without being bound by it. 




The Art of Selection


Getting there wasn't quite so simple. We started with over thirty iterations. We ended with ten. A drink made the final collection if it did two things: brought something new to the table and held its structure at scale.


If a technique flattened the profile, or a garnish felt like an afterthought, it was reconsidered. What remains are ten distinct serves – each one earning its place this season.


Crafted in the Kitchen


Every collection starts in the kitchen. At The Drunken Jockeys, we prioritise working with local and seasonal producers wherever possible. We let the season guide our inspiration,

raw flavours are transformed through clarification, infusion and fermentation.


The 'Jalapeño Hi-Ball' leads with bright notes. Clarified pink grapefruit creates a crystal-clear, crisp base for Bone Idyll vodka and jalapeño-infused agave, finished with a light Campari dusting on the glass. Sharp, modern and deceptively light.


Leaning into deeper flavours, 'Fire Flower' pairs thyme-infused tequila with mezcal, house-spiced hibiscus soda and pomegranate molasses. Meanwhile, 'Pear Shaped' focuses on warmth and texture. Blanco tequila is layered with a homemade rooibos-spiced pear preserve and a bone-dry splash of Romate Fino sherry.


Three cocktails, three very different expressions of the season, but each built around the same idea: contrast creates depth.



Rethinking Richness


True depth of flavour comes from patience. When we lean into cold-weather indulgence, we let slower processes build richness rather than relying on heavy syrups.


'Overnight Old Fashioned' steeps Scottish rolled oats directly into Scotch, before stirring with brown-butter-washed VSOP cognac and golden syrup bitters. For the 'Banana Bread Carajillo', dark banana skins are macerated in bittersweet coffee amaro, layered with cinnamon-infused rum and cold brew.


Precision shines through our 'Gunpowder Gimlet'. A delicate balance of Drumshanbo gin, Darjeeling tea, wild British honey and smoked salt. Beside it, the 'Dark Chocolate Negroni' uses a pinch of sea salt to sharpen dark ceremonial cacao, letting the Campari pop.



Zero Compromise on Flavour


We believe a great menu serves everyone in the room. We brought the same rigour to our low and non-alcoholic drinks, curating complex, stand-alone creations, rather than simple mocktails.


'Chai Cherry Fizz' bursts with effervescence from tart cherry preserve and house-brewed chai-tamarind tea, while our 'Cold Toddy' blends Surrey wildflower honey, ginger, lemongrass and yuzu sake for a bright, restorative sip.


Rounding out the collection, the Low-ABV 'Blood Clem' combines pressed clementine and blood orange cordial with rosemary Cointreau and dry sparkling Crémant.
